The Salted Pig will close at its original Riverside location on Sunday, Oct. 13, as it prepares to reopen on the city's Main Street Pedestrian Mall.

One of the Inland Empire's first gastropubs, The Salted Pig has been serving craft beers, cocktails, pork belly sandwiches, and bacon fat popcorn on 12th Street since 2011.

"We're welcoming any and all people who had been in the space, had special moments there -- proposals, first dates -- to come in and then on social media to share their experiences, their memories," said owner Ronaldo Fierro. "And then we're going to spend a week sharing those testimonials on our social media."

"I feel there's a lot of people who really saw The Salted Pig as a second home, and I want to honor that before we move and create that same feeling for a whole new group of people," he added.

Fierro was standing in what will be the dining room of the new Salted Pig, a space built to his needs on the mall across from the 11-story California Tower. It was intended to anchor the new Imperial Hardware Lofts, but the mixed-use development has never announced any other retail tenants since it opened in August 2018.

The Salted Pig's move has been a long time coming.

Ratkovich Properties, the Lofts' developer, announced The Salted Pig as a tenant in the spring of 2018. The plan was for Fierro to shut down the original restaurant in late summer and open the new one shortly after the Lofts' grand opening.

But Fierro decided to enlarge the 2,470 squre-foot space by 1,000 feet, which required a redesign and new approvals. At the same time, he entered a June 4 election for Riverside City Council, representing Ward 3, and faces Warren Avery in a Nov. 5 runoff.

He pushed back the opening, first to mid-summer and now to the end of October or early November. Booths and lighting fixtures have been installed, but not the bar's terrazzo countertops, the copper tap system, or the kitchen equipment.

After the new Salted Pig opens, phase two will be patio dining. The details are yet to be worked out with the city, according to Fierro.

"In a lot of ways, that patio will set precedent for the entire Main Street Mall," he said. "As more and more hospitality establishments keep opening off Main Street, we're going to want all those patios to line up to get that walking paseo feeling the city has been trying to achieve for the last 15 years."

Fierro said he will also take on a new eatery he plans to open in a mall site opposite the Salted Pig formerly occupied by Salad Buzz. He originally envisioned it as serving quick-service breakfasts, but now thinks a dessert concept would better complement the gastropub.
